Zucchini Bread
One of the best things about having a garden and planting zucchini is making this bread. If you have more zucchini than you know what to do with…start up the oven and bake up this delicious, sweet bread.
Ingredients
- 4 cups coarsely shredded zucchini
- 3 cups all purpose flour
- 2 1/2 cups sugar
- 1 1/4 cups vegetable oil
- 4 eggs, beaten
- 1 Tbsp plus 1 tsp vanilla
- 1 Tbsp ground cinnamon
- 1 1/2 tsp salt
- 1 1/2 tsp baking soda
- 1/2 tsp baking powder
Instructions
- Heat oven to 325 degrees
- Grease generously bottoms only of 2 loaf pans; 9x5x3 in.
- Blend all ingredients on low speed for 1 minute, scaping bowl constantly
- Beat on medium speed for 1 minute
- Pour evenly into the two pans
- Bake for 50 mins to 1 hour, or until a toothpick inserted into the center comes out clean.
- Cool for 10 mins; then remove from pans.
- Cool completely
Notes
- Feel free to add a cup of chopped nuts
