Peppered Marinade
I don't make this marinade very often, although I wish that wasn't the case. I've used it on beef jerky to give it a nice peppery finish. It's probably one of my favorite seasonings but it provides more kick than the rest of the family cares for. Alas, that means it mostly sits on the backburner waiting for an opportunity to be showcased.
Ingredients
- 1 Can or bottle of dark beer.
- 1 cup Soy Sauce
- 1/4 cup Worcestershire Sauce
- 3 tbsp Brown Sugar
- 1 tbsp Kosher Salt
- 1/2 tsp Garlic Salt
- 4 tbsp Coarsely Ground Black Pepper (divide in half)
Instructions
- Combine the beer, soy sauce, Worcestershire sauce, brown sugar, curing salt, garlic salt, and 2 tablespoons (half) of the black pepper.
- Combine marinade with meat in a bag and allow to marinate overnight.
- Use the remaining pepper to season/rub the meat. You can do this before cooking it or after, depending on your preference.
