Herb Butter Paste

Herb Butter Paste

The herbs in this give your meat a lighter, even refreshing, finish.  At Thanksgiving, we use this every year on one of our turkeys and it consistently results in a wonderful tasting, and looking, bird. 

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 Tbsp olive oil
  • 4 Tbsp fresh lemon juice (from 1 large lemon)
  • 1/2 Tbsp lemon zest
  • 3 large garlic cloves
  • 1/4 cup freshly chopped parsley
  • 1/2 Tbsp salt
  • 1/2 tsp black pepper, freshly ground

Instructions

  1. In a medium bowl, combine all of the ingredients
  2. Mash and stir with a fork until well combined

Notes

  • It can get tricky trying to get the lemon juice to mix in with butter, but keep on mixing and it will happen.
  • Get your meat as dry as possible prior to rubbing this on.  The dryer the meat, the better it will stick.
