Herb Butter Paste
The herbs in this give your meat a lighter, even refreshing, finish. At Thanksgiving, we use this every year on one of our turkeys and it consistently results in a wonderful tasting, and looking, bird.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 2 Tbsp olive oil
- 4 Tbsp fresh lemon juice (from 1 large lemon)
- 1/2 Tbsp lemon zest
- 3 large garlic cloves
- 1/4 cup freshly chopped parsley
- 1/2 Tbsp salt
- 1/2 tsp black pepper, freshly ground
Instructions
- In a medium bowl, combine all of the ingredients
- Mash and stir with a fork until well combined
Notes
- It can get tricky trying to get the lemon juice to mix in with butter, but keep on mixing and it will happen.
- Get your meat as dry as possible prior to rubbing this on. The dryer the meat, the better it will stick.
