Cinnamon Puff Muffins

Our family likes to call these “Christmas Muffins” because the nutmeg in them will remind you of Christmas. These are quick to make and they taste great. On weekends, if I have a little extra time in the mornings I like to make these for the family.

Ingredients

Muffins

  • 3 cup All purpose flour
  • 1 cup Sugar
  • 2 1/2 tsp Baking powder
  • 1 1/4 tsp round nutmeg
  • 3/4 tsp Salt
  • 2 Large Eggs
  • 1 1/4 cup Milk
  • 5 1/3 tbsp Butter (melted)

Topping

  • 1/4 cup Sugar
  • 1/2 tsp Ground cinnamon
  • 4 tbsp Butter (melted)

Instructions

Muffins

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, nutmeg, and salt.
  2. In another bowl, beat the eggs slightly, add the milk and the melted butter.
  3. Make a well in the middle of the dry ingredients and add the wet mixture in.
  4. Stir just until evenly moistened. The batter may be lumpy.
  5. Lightly grease a cupcake pan (12 muffins) and fill each cup about 3/4’s full. Do not use liners.
  6. Bake at 350 degrees for 20 to 25 minutes

Topping

  1. While the muffins are baking, combine the sugar and cinnamon in a small, shallow bowl.
  2. Melt the butter in another small shallow bowl.
  3. When the muffins are finished, dip the tops into the butter (or brush the butter on) and then immediately dip them into the cinnamon and sugar mixture.
