Bacon Butter Paste

Just about any butter paste promises to add lots of flavor to your meat, but add bacon and it's just that much better.  This thick paste rubs on to turkey or chicken to add lots of flavor and moisture.

  1. Using slightly frozen bacon, cut it into smaller pieces, about 1/2 inch
  2. Cut butter into 1/2 inch pieces
  3. Blend or use a food processor to mix all of the ingredients down to a smooth paste
  4. Use immediately or store covered in the fridge

Notes

  • This is enough for one large turkey (20+lbs.).
  • Slightly freezing the bacon ahead of time helps it to cut and grind up easier.
  • Before applying the paste, drying your meat will help the paste to stick to the surface.
  • If you grind this up real fine, you can separate some off, melt it in the microwave and inject it into poultry.
