Ribs and Sauce

Rib Sauce

I needed a good sauce for brushing on my ribs the last 30-60 minutes of cooking. I put this together using the traditional ketchup, but I wanted to reduce the sweetness to prevent taking away from the flavor of the ribs.  The sautéed onions in this recipe do this perfectly, leaving you with a great tasting, mild flavor.

Ingredients

  • Small Onion
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 2 cups ketchup
  • 1/3 cup brown sugar
  • 3 cloves garlic (crushed)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon fresh ground pepper

Instructions

    1. Cut up onion and then blend it with the water into a puree
    2. Heat the olive oil in a medium-sized saucepan over medium heat
    3. When the oil is warm, pour in the onion puree and simmer for 2 to 3 minutes
    4. Add the remaining ingredients, mix thoroughly and simmer for 12 to 15 minutes
    5. Allow the sauce to cool and thicken, about 30 mins

Notes

  • Grind your pepper from fresh peppercorns.
  • This sauce stores nicely in the fridge.
