Rib Sauce
I needed a good sauce for brushing on my ribs the last 30-60 minutes of cooking. I put this together using the traditional ketchup, but I wanted to reduce the sweetness to prevent taking away from the flavor of the ribs. The sautéed onions in this recipe do this perfectly, leaving you with a great tasting, mild flavor.
Ingredients
- Small Onion
- 2 tablespoons water
- 2 tablespoons olive oil
- 2 cups ketchup
- 1/3 cup brown sugar
- 3 cloves garlic (crushed)
- 1 tablespoon apple cider vinegar
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dry mustard
- 1/2 teaspoon cayenne pepper
- 1 teaspoon fresh ground pepper
Instructions
- Cut up onion and then blend it with the water into a puree
- Heat the olive oil in a medium-sized saucepan over medium heat
- When the oil is warm, pour in the onion puree and simmer for 2 to 3 minutes
- Add the remaining ingredients, mix thoroughly and simmer for 12 to 15 minutes
- Allow the sauce to cool and thicken, about 30 mins
Notes
- Grind your pepper from fresh peppercorns.
- This sauce stores nicely in the fridge.
