Sour Dough Bread
My wife was recently gifted a sour dough starter. She cares for it every day. Since then we've made waffles and bread with it. Some things work out, some things don't. This bread has consistently worked out well.
Ingredients
- 320g Sour dough starter
- 624g warm water
- 1020g flour
- 24g salt
Instructions
- Combine starter, water, and flour in a large bowl.
- Let rest for 30 mins.
- Stir in salt.
- Let rest for 30 mins.
- Stretch and fold dough. Repeat 4 times every 30 minutes.
- Cover with a towel and let it sit for 4-7 hours.
- Pre-shape and let rest for 30 mins.
- Re-shape and refrigerate 12-14 hours.
- Pre heat a Dutch oven in the oven at 425 degrees.
- Put shaped dough in the hot Dutch oven, bake covered for 20 mins.
- Uncover and bake and additional 20 mins, or until golden brown.
- Place on counter to fully cool before cutting.
