Sweet Potato Casserole
OMG, is this a side dish or a dessert? Even if you don't like sweet potatoes, you will love this. For us, this is a staple for holiday dinners. Make extra! The family will be back for seconds and even thirds.
Ingredients
Casserole
- 6 lb Sweet Potatoes
- 1 1/2 cup Sugar
- 4 1/2 tsp Flour (heaping)
- 3/4 cup Butter
- 3 Eggs
- 1/2 tsp Cinnamon
- 3/4 cup Milk
Topping
- 1 cup Brown Sugar
- 1/2 cup Flour
- 1/2 cup Melted Butter
- 1 1/2 cup Broken Pecans
Instructions
- Peel and cube the sweet potatoes
- Boil the sweet potatoes until they are soft (approx. 20 mins)
- Drain the sweet potatoes and place in a large electric mixer bowl.
- Mix the potatoes on medium to mash them.
- Add in the remaining casserole ingredients (first seven) and mix.
- Place in a half steam table pan (10″ x 8″ x 2.5″ deep)
- In a different bowl, mix together topping ingredients until crumbly.
- Place topping evenly on top of the sweet potato mixture.
- Bake at 350 degrees for 30 mins. Topping should be brown and bubbly.
