Sweet Potato Casserole

OMG, is this a side dish or a dessert? Even if you don't like sweet potatoes, you will love this. For us, this is a staple for holiday dinners. Make extra! The family will be back for seconds and even thirds.

Ingredients

Casserole

  • 6 lb Sweet Potatoes
  • 1 1/2 cup Sugar
  • 4 1/2 tsp Flour (heaping)
  • 3/4 cup Butter
  • 3 Eggs
  • 1/2 tsp Cinnamon
  • 3/4 cup Milk

Topping

  • 1 cup Brown Sugar
  • 1/2 cup Flour
  • 1/2 cup Melted Butter
  • 1 1/2 cup Broken Pecans

Instructions

  1. Peel and cube the sweet potatoes
  2. Boil the sweet potatoes until they are soft (approx. 20 mins)
  3. Drain the sweet potatoes and place in a large electric mixer bowl.
  4. Mix the potatoes on medium to mash them.
  5. Add in the remaining casserole ingredients (first seven) and mix.
  6. Place in a half steam table pan (10″ x 8″ x 2.5″ deep)
  7. In a different bowl, mix together topping ingredients until crumbly.
  8. Place topping evenly on top of the sweet potato mixture.
  9. Bake at 350 degrees for 30 mins. Topping should be brown and bubbly.
